Avocado Pasta Salad

A nice refreshing spring and summer salad is so easy with delicious Avocado's. A great way to get healthy fats into your diet. This is a good make ahead salad for picnicking. Keep the pit in the salad until ready to use. Keep it cold in the fridge or a cooler. And it's pretty too! I would throw in some cashews or pistachios for some crunch.

Ingredients:
  • 6 oz GF penne (or other pasta of choice)
  • 1/3 cup prepared GF vinaigrette dressing
  • 1/2 cup diced fresh red bell pepper
  • 1/2 cup diced fresh green bell pepper
  • 1/2 cup Feta cheese, or dairy free cheese of choice
  • 1/3 cup chopped fresh red onion thinly sliced
  • 1/4 cup pitted black olives, coarsely chopped
  • 3/4 tsp. fresh chopped garlic
  • 2 tsp. fresh chopped parsley
  • 2 ripe Fresh Avocados, peeled, seeded and diced
Directions:
  1. Cook pasta in salted, boiling water per package directions; drain well.
  2. While still warm, toss with vinaigrette; cool.
  3. Fold in remaining ingredients and serve.
