- 6 oz GF penne (or other pasta of choice)
- 1/3 cup prepared GF vinaigrette dressing
- 1/2 cup diced fresh red bell pepper
- 1/2 cup diced fresh green bell pepper
- 1/2 cup Feta cheese, or dairy free cheese of choice
- 1/3 cup chopped fresh red onion thinly sliced
- 1/4 cup pitted black olives, coarsely chopped
- 3/4 tsp. fresh chopped garlic
- 2 tsp. fresh chopped parsley
- 2 ripe Fresh Avocados, peeled, seeded and diced
- Cook pasta in salted, boiling water per package directions; drain well.
- While still warm, toss with vinaigrette; cool.
- Fold in remaining ingredients and serve.
