Mango Leather

The time is NOW! Mango's are in season! What a fun project for the kids and tasty too! If you don't have a dehydrator put it in the oven on low until it is dried out but is still bendable. Times vary on the amount of moisture the mango has.

Ingredients:

  •  2 lb mangoes (about 3 medium) 
  •  2 Tbsp GF rice syrup (or corn if tolerated)
  •  1 Tbsp lemon juice
  •  Plastic food storage bags or vacuum packages

Directions:

  1. WASH mangoes and drain. Peel, pit and dice mangoes.
  2. PUREE mangoes in a food processor or blender. 
  3. ADD Gf rice syrup and lemon juice. Blend. 
  4. SPREAD puree evenly on dehydrator trays to 1/4-inch thick. 
  5. DRY at 135°F until pliable, about 12 to 14 hours. If doing it in the oven use a cookie sheet with parchment paper.
  6. CUT mango leather into 6-inch circles or strips. Place in parchment paper or plastic wrap.
